Nutty Pineapple Slaw
|Shredded green cabbage||2 1⁄2 Cup (40 tbs)|
|Shredded red cabbage||1 1⁄2 Cup (24 tbs)|
|Chopped sweet red pepper||3⁄4 Cup (12 tbs)|
|Canned crushed pineapple in juice||8 Ounce, drained|
|Nonfat sour cream alternative||1 Cup (16 tbs)|
|Dry mustard||1 Tablespoon|
|Cider vinegar||3 Tablespoon|
|Unsalted dry roasted peanuts||2 Tablespoon, chopped|
Combine cabbages and red pepper in a large bowl; toss well.
Combine crushed pineapple, sour cream, sugar, mustard, vinegar, and salt in a small bowl, stirring well.
Add pineapple mixture to cabbage mixture, and toss until blended.
Cover and chill.
Sprinkle slaw with peanuts just before serving.
