Ginger Fruit Slaw

Ingredients
  Canned crushed pineapple 8 Ounce, juice pack (1 Can)
  Shredded red cabbage 5 Cup (80 tbs)
  Oranges 3 Large, peeled and sectioned
  Carrots 2 Large, shredded
  Snipped dried apricots 3⁄4 Cup (12 tbs)
  Honey 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon
  Ground ginger 1⁄2 Teaspoon
Directions

Drain pineapple, reserving 1/4 cup of the juice; set aside.
In a large bowl combine cabbage, orange sections, shredded carrots, snipped apricots, and crushed pineapple; cover and chill.
In a screw-top jar combine reserved pineapple juice, honey, lemon juice, and ginger.
Cover and chill.
Just before serving, shake dressing; pour over cabbage mixture.
Toss to mix dressing with cabbage mixture
