Ginger Fruit Slaw
|Canned crushed pineapple||8 Ounce, juice pack (1 Can)|
|Shredded red cabbage||5 Cup (80 tbs)|
|Oranges||3 Large, peeled and sectioned|
|Carrots||2 Large, shredded|
|Snipped dried apricots||3⁄4 Cup (12 tbs)|
|Honey||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Ground ginger||1⁄2 Teaspoon|
Drain pineapple, reserving 1/4 cup of the juice; set aside.
In a large bowl combine cabbage, orange sections, shredded carrots, snipped apricots, and crushed pineapple; cover and chill.
In a screw-top jar combine reserved pineapple juice, honey, lemon juice, and ginger.
Cover and chill.
Just before serving, shake dressing; pour over cabbage mixture.
Toss to mix dressing with cabbage mixture
