Delaware Crab Cakes
|Egg||1 , beaten|
|Saltine crackers||1⁄2 Cup (8 tbs), finley crushed|
|Milk||1⁄3 Cup (5.33 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Pepper white||1⁄8 Teaspoon|
|Cayenne pepper||1⁄8 Teaspoon|
|Crab meat||1 Ounce, drained, flaked (and cartilage)|
|Snipped parsley||1 Tablespoon|
In bowl combine egg, crackers, milk, mustard, white pepper, and cayenne.
Stir in crab meat and parsley.
Using 1/3 cup mixture for each, shape into 4 parties 3 inches in diameter.
Cover and chill patties at least 30 minutes.
Just before serving time, preheat Meal Browner browning dish at HIGH for 6 minutes.
Add lard, tilting dish to coat with fat.
Add crab cakes.
Cover and cook at HIGH for 1 1/2 minutes.
Cook, covered, at HIGH 1 1/2 minutes more.
