Kentucky Lace Edge Corn Cakes

Ingredients
  Salt 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Water ground white cornmeal 1 Cup (16 tbs)
  Egg 1
  Butter milk 1 1⁄4 Cup (20 tbs)
Directions

Mix salt and baking soda thoroughly with meal.
Mix egg well with buttermilk.
Combine both mixtures and beat until smooth.
Drop by tablespoons of batter onto a hot greased griddle.
Bake until underside is brown (lift edge gently and peek).
Then turn, but only once.
Never pat or flatten the cakes with a turner.
Stir batter well before dipping out each batch.
