Maine Seafood Chowder

  Salt pork slice 6 , diced
  Onion 1 , chopped
  Potatoes 6 , peeled and diced
  Water 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Cod/Haddock 2 Pound, skinned, boned, and cut into pieces
  Sea scallops 1 Pound, cut into halves
  Boiled lobsters 2 Pound, shelled and cubed (Two 1 Pound Pieces)
  Milk 4 Cup (64 tbs)
  Light cream 2 Cup (32 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Chopped parsley 1 Tablespoon
  Paprika To Taste

Cook salt pork until crisp.
Add onion, potatoes, water, and salt.
Simmer, covered, until almost tender.
Add fish, scallops, lobsters, and hot milk.
Simmer over very low heat for 10 minutes.
Add cream and butter.
Reheat but do not boil.
Garnish with chopped parsley and sprinkle with paprika.
