Charmaine's Wonderful Cajun Rice
|Green onion with tops||1 Bunch (100 gm), chopped|
|Green pepper||1 Large, chopped|
|Celery ribs||3 , chopped|
|Ground beef||1 Pound|
|Smoked sausage||1⁄2 Pound, thinly sliced|
|Shrimp||1⁄2 Pound, peeled and cooked|
|Rotel diced tomatoes||1 Can (10 oz)|
|Long grain and wild rice mix||8 Ounce (2 Boxes, Uncle Ben's Original)|
|Barbeque sauce||1 Tablespoon (Lea & Perrins)|
Saute vegetables in oil.
Brown sausage and beef.
In large covered pot, combine all ingredients, using Ro-Tel as part of water called for on both rice mixes (Ro-Tel and water should equal approximately 2 2/3 cups).
Cover and simmer approximately 25 minutes.
