Southern Peach Shortcake
|Peaches||2 Cup (32 tbs), sliced|
|Granulated sugar||2 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|Flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Vegetable shortening||2 Teaspoon (liquid)|
|Milk||1⁄4 Cup (4 tbs)|
Place peaches in bottom of well greased 8 in. (20 cm) baking dish.
Sprinkle with 1 T. (15 mL) of the sugar replacement, the almond extract and cinnamon.
Combine flour, remaining 1 T. (15 mL) sugar replacement, baking powder and salt in mixing bowl.
Add shortening, egg and milk, stirring just to mix.
Spread evenly over peaches.
Bake at 400°F (200°C) for 30 minutes, or until lightly browned.
Invert onto serving plate.
