Lobster Newburg Spiced With Nutmeg

Ingredients
  Butter 6 Tablespoon
  Lobster meat 2 Cup (32 tbs)
  Flour 2 Tablespoon
  Dry sherry 1⁄2 Cup (8 tbs)
  Egg yolks 4
  Thin cream 2 Cup (32 tbs)
  Salt To Taste
  Tabasco 1 Dash
  Nutmeg 1⁄8 Teaspoon
  Patty shells/4 toast 4
Directions

Heat butter in blazer pan over moderate heat and cook lobster for 3 minutes.
Sprinkle with flour and cook 1 minute longer.
Place over hot water in pan and add sherry and cook until hot.
Mix egg yolks with cream and add slowly to lobster, stirring constantly.
Continue to cook and stir until mixture thickens.
Add seasonings.
