Boston Baked Beans

Ingredients
  Pea beans 1 Pound
  Salt pork 1⁄4 Pound
  Salt 2 Teaspoon
  Granulated brown sugar 1 1⁄2 Teaspoon
  Dietetic maple syrup 1⁄2 Cup (8 tbs)
  Dry mustard 1⁄2 Teaspoon (Tone's Brand)
  Boiling water 1 Cup (16 tbs)
Directions

Wash and sort beans.
Soak beans overnight in cold water.
Drain and cover with fresh water.
Simmer until skins split; drain.
Pour beans into a bean pot.
Cut salt pork into small pieces; press into the beans.
Combine remaining ingredients in a bowl.
Stir to blend and pour over beans.
Cover and bake at 300°F (150°C) for about 8 hours.
Add extra water when needed.
Uncover to brown during last half hour of baking.
