Boston Baked Beans
|Pea beans||1 Pound|
|Salt pork||1⁄4 Pound|
|Granulated brown sugar||1 1⁄2 Teaspoon|
|Dietetic maple syrup||1⁄2 Cup (8 tbs)|
|Dry mustard||1⁄2 Teaspoon (Tone's Brand)|
|Boiling water||1 Cup (16 tbs)|
Wash and sort beans.
Soak beans overnight in cold water.
Drain and cover with fresh water.
Simmer until skins split; drain.
Pour beans into a bean pot.
Cut salt pork into small pieces; press into the beans.
Combine remaining ingredients in a bowl.
Stir to blend and pour over beans.
Cover and bake at 300°F (150°C) for about 8 hours.
Add extra water when needed.
Uncover to brown during last half hour of baking.
