Potato Flake Bread
|Frozen bread dough||1 , thawed (For 1 Loaf)|
|Potato flakes||1⁄2 Cup (8 tbs) (Dried)|
Press or roll dough as flat as possible.
Combine egg white and water in a small cup; with a fork, beat until foamy.
Lightly brush the flattened surface of the dough, reserving some egg liquid for later.
Sprinkle 54 c. (90 mL) of the potato flakes over the moistened surface.
Roll up jelly-roll style, turning in the side edges.
Knead dough to incorporate the flakes into the dough.
Form into a French-style loaf; place on a greased baking sheet.
Cover and allow to rise until at least double in size.
Lightly brush top of loaf with remaining egg mixture and sprinkle with remaining potato flakes.
Bake at 350°F (175°C) for 22 to 25 minutes or until golden brown.
