Frankfurters With Hot Vegetable Slaw
|Green cabbage head||1 Medium, thinly sliced|
|Salad oil||1 Tablespoon|
|Carrots||2 Medium, coarsely shredded|
|Green pepper||1 Large, cut into thin strips|
|Onion||1 Small, thinly sliced|
|Water||1⁄2 Cup (8 tbs)|
|Russian dressing||1⁄4 Cup (4 tbs)|
|Frankfurters||16 Ounce (1 Package)|
|Hero rolls||5 (6 Inch Long)|
1. In 3-quart saucepan over medium heat, in 2 tablespoons hot oil, cook cabbage, carrots, green pepper, onion, and water about 10 minutes, stirring frequently, until vegetables are tender. Stir in Russian dressing; heat.
2. In 12-inch skillet over medium-high heat, in 1 tablespoon hot oil, brown frankfurters.
3. Meanwhile, preheat oven to 400F. Cut each hero roll horizontally in half, being careful not to cut all the way through. Place rolls on cookie sheet, cut side up; bake 5 minutes or until hot.
4. Arrange 2 frankfurters in each roll; spoon some vegetable mixture over frankfurters.
