|Light cream||1⁄2 Cup (8 tbs)|
Pour boiling water over tomatoes, let stand several minutes, then slip off the skins.
Cut tomatoes in half crosswise and place in a flame proof baking dish.
Cover the tops generously with a mixture of green pepper and onion.
Dot each tomato with butter and sprinkle with a little salt and pepper.
Bake in a preheated 350° oven for 15 to 20 minutes or until tomatoes are very tender.
Place each tomato on a round of buttered toast and keep warm.
To make the sauce, add the tablespoon of butter to the pan drippings.
When it has melted, add the flour and stir until smooth.
Then add the cream.
Cook, stirring constantly, until sauce thickens.
Season to taste.
Pour sauce over tomatoes.
