Southwestern Style Guacamole
|Ripe avocado||1 Small, peeled and pitted|
|Low fat plain yogurt||2 Tablespoon|
|Ripe tomatoes||2 Medium, peeled, cored, seeded, and chopped|
|Minced parsley/Coriander||1⁄4 Cup (4 tbs)|
|Ground coriander||1⁄2 Teaspoon|
|Red onion||1⁄2 Small, chopped|
|Lime juice||4 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
|Jalapeno pepper||1⁄2 Small, seeded and chopped fine|
Place the avocado in a large bowl and mash it with a potato masher until almost smooth, leaving a few lumps for texture.
Mix in the remaining ingredients.
