Gourmet Oysters Rockefeller

Ingredients
  Oysters on half shell 36
  Bacon slices 6
  Sour cream 1 1⁄4 Cup (20 tbs)
  Green onion tops 4 , chopped very fine
  Salt 1⁄2 Teaspoon
  Tabasco sauce/Cayenne pepper 5 Dash
  Parsley 2 Tablespoon, chopped fine
  Garlic 1 Teaspoon, crushed in garlic press
  Grated parmesan cheese 1⁄2 Cup (8 tbs)
  Lemon juice 1 1⁄2 Teaspoon
  Celery leaves/1 teaspoon celery salt 4 , chopped fine
  Fresh spinach 1 1⁄4 Cup (20 tbs), minced
  Butter 3⁄4 Cup (12 tbs)
  Coarse salt To Taste
  Breadcrumbs 3⁄4 Cup (12 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Be sure to cut the muscles joining the oysters to the shells, and remove the oysters from the shells entirely.
Blend well together the sour cream, salt, Tabasco Sauce, crushed garlic, and lemon juice.
Boil about two thirds of the chopped spinach 6 or 8 minutes in a small amount of liquid, preferably oyster liquor.
