Monterey Chicken Sandwiches
|Red onion||1 Large, thinly sliced|
|Dried thyme leaves||1 Teaspoon, crushed|
|Vegetable oil||1⁄2 Tablespoon|
|Boneless skinless chicken breast halves||4|
|Kaiser rolls||4 , split|
|Radicchio leaves/Lettuce leaves||4|
|Black pepper||To Taste|
Heat oil and margarine in large skillet over medium heat.
Add chicken; sprinkle with thyme.
Cook 8 minutes or until browned on both sides and no longer pink in center, turning after 4 minutes.
Season with salt and pepper, if desired.
Remove from skillet; keep warm.
Add onion to skillet; cook and stir until tender.
Fill rolls with radicchio leaves, chicken and onion.
