Veal And Pork Chops Creole

Ingredients
  Veal chops 6
  Sugar 1⁄2 Teaspoon
  Pork chops 6
  Worcestershire sauce 1 Teaspoon
  Lard/Fat 4 1⁄2 Tablespoon
  Bay leaves 2
  Onions 2 , minced
  Minced parsley 1 Tablespoon
  Garlic 3 Clove (15 gm), minced
  Minced celery 1 Tablespoon
  Flour 3 Tablespoon
  Minced green pepper 2 Tablespoon, minced
  Canned tomatoes 14 Ounce (1 Large Can)
  Thyme sprig 2
  Salt To Taste
  Pepper To Taste
Directions

Wipe the chops with a cloth, melt the fat in a Dutch oven, and let the chops steam until brown.
Take them out and set them aside.
Put the onions and garlic in the pot, let them brown, and stir in the flour until it is brown.
Add the tomatoes and cook 5 minutes.
Add the chops and all other ingredients.
Simmer for 1 hour.
