|Sugar||3⁄4 Cup (12 tbs)|
|Madeira||1 Cup (16 tbs)|
|Half and half||3 Quart|
Beat egg yolks until very thick and creamy, then thoroughly beat in the sugar, a little at a time.
Beat in the nutmeg, then mix in the brandy or rum and Madeira.
Beat egg whites until they stand in peaks, then fold into the yolk mixture.
Stir in the half and half.
