Crispy Coleslaw

The crispy coleslaw is a vegetable coleslaw prepared with cabbage, peppers and onions. Dressed with oil and vinegar, this crispy coleslaw has the fresh crunch of vegetables to it and is chilled to marinate before serving.
Ingredients
  Cabbage 1 Small, shredded
  Green pepper 1⁄2 , chopped
  Red pepper 1⁄2 , chopped
  Onion 1 Medium, chopped
  Sugar 1 Cup (16 tbs)
  Vinegar 1 Cup (16 tbs)
  Vegetable oil 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Celery seeds 1 Teaspoon
Directions

Combine cabbage, peppers, onion, and sugar in a large bowl; stir well.
Cover and chill 2 hours.
Combine remaining ingredients in a saucepan; bring to a boil, stirring until salt dissolves.
Pour over cabbage mixture; toss gently.
Cover and chill at least 2 hours before serving.
Will keep several days in the refrigerator.
