Ingredients
  Chopped fresh cilantro 1⁄4 Cup (4 tbs) (Leaves)
  Fresh lime juice 1⁄4 Cup (4 tbs)
  Honey 4 Teaspoon
  Salt 1⁄4 Teaspoon
  Crushed red pepper 1⁄8 Teaspoon
  Shredded carrot 10 Ounce (1 Package)
  Jicama 1 Medium, peeled and cut into 1/8 inch thick sticks
  Red pepper 1⁄2 Medium, cut into 1/8 inch thick slices
  Fresh cilantro leaves 1 Teaspoon (For Garnish)
Directions

In large bowl, with fork, mix chopped cilantro, lime juice, honey, salt, and crushed red pepper.
Add carrots, jicama, and red pepper; toss.
Cover and refrigerate if not serving right away.
Garnish with cilantro.
