Easy Basic Spoon Bread

Ingredients
  Boiling water 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Enriched cornmeal 1 Ounce
  Egg 1
  Skim milk 1⁄4 Cup (4 tbs)
Directions

Artificial sweetener to equal 2 tablespoons sugar (optional) Pour boiling water and salt over cornmeal in top of double boiler and cook over hot water for 30 minutes, stirring often.
Remove from heat.
Beat together egg, milk and sweetener.
Mix into corn-meal and stir till free from lumps.
Transfer to shallow non-stick baking pan and bake at 400° F. about 20 minutes, to brown top.
Serve hot (with spoon) as a filling breakfast dish.
Also a delicious luncheon dish; supplement as required.
