|Butter/Bacon drippings||2 Tablespoon|
|Minced onion||1⁄4 Cup (4 tbs)|
|Minced green pepper||3 Tablespoon|
|Sliced okra||1 1⁄2 Cup (24 tbs)|
|Canned tomatoes/Fresh tomatoes||2 Cup (32 tbs), peeled and chopped|
|Ground black pepper||To Taste|
1. Heat the butter, add the onion and green pepper and cook until soft but not brown.
2. Add the okra and saute over moderate heat about five minutes, stirring constantly.
3. Reduce the heat, add the remaining ingredients and simmer, covered, about twenty minutes. Add a small amount of water if necessary to prevent scorching and give a moist consistency.
