Chicken Gumbo Casserole
|Chicken||3 Pound, cut up|
|Smoked sausage||1 Pound, cut into 0.25 inch slices|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Onion||2 Cup (32 tbs), chopped|
|Green pepper||1 Small, chopped|
|Pepper red||1 Small, chopped|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Water||3 Cup (48 tbs)|
|Chicken bouillon cube||2|
In 3-quart casserole, place chicken, sausage and oil.
Microwave at high (10) 10 to 12 minutes; turn chicken over after 5 minutes.
In small mixing bowl, combine onion, green pepper and red pepper.
Microwave at high (10) 6 to 7 minutes until tender.
Add to chicken.
In 4 cup glass measure, combine flour and water; stir until blended.
Microwave at high (10) 3 to 5 minutes; stir after 2 minutes.
Add bouillon, salt and pepper; mix well and pour over chicken and vegetables.
Insert metal accessory rack.
Preheat oven to 350°F.
Cook on Combination Code 4, 35 to 40 minutes.
