Santa Fe Pasta Prima Vera
|Olive oil||1 Teaspoon|
|Green chilies||1⁄2 Cup (8 tbs)|
|Whole garlic cloves||1⁄2 , cleaned|
|Cooked spaghetti||24 Ounce|
|Assorted fresh vegetables||16 Ounce|
Core tomatoes and place with whole garlic cloves and jalapenos on greased pan and roast until tomatoes have cracked and soft to the touch in 350° oven.
Remove from oven and remove stems and seeds from jalapenos, then place all items in blender and puree.
To Serve: Saute vegetables with a small amount of olive oil and fresh garlic.
Deglaze with white wine and add the sauce and toss with hot pasta.
