Cod Cutlets In Cider
|Browned breadcrumbs||1 1⁄2 Cup (24 tbs)|
Slice one onion and arrange at the bottom of a grassed fireproof dish.
Peel the lemon and slice it finely, putting half with the onion and a sprinkling of parsley, salt and pepper.
Now arrange the cutlets on top.
Put the rest of the mixture of onions, lemon slices and parsley over them.
Just cover with the cider, and sprinkle top with breadcrumbs.
Dot with the butter and cook in a moderate oven for about 30-40 minutes.
