Creole Liver

Ingredients
  Canned tomato sauce 8 Ounce
  Canned tomatoes 16 Ounce
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Chopped celery 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Beef liver 1 3⁄4 Pound, cut into strips
  Oil 2 Tablespoon
  Cooked rice 3 Cup (48 tbs)
Directions

Mix tomato sauce and tomatoes with green pepper, celery, onion, salt, and pepper.
Simmer 15 minutes.
Cook liver in fat until lightly browned.
Add to tomato mixture; simmer 30 minutes or until liver is tender.
