Raw Mushroom Radish Boston Lettuce Salad
|Freshly ground black pepper||1⁄2 Teaspoon|
|Lemons||2 , juiced|
|Chopped chives||2 Tablespoon|
|Boston lettuce head||1 , rinsed and chilled|
|Celery/Fennel||1⁄2 Cup (8 tbs), finely chopped|
|Salad oil||1⁄4 Cup (4 tbs)|
Wash mushrooms and cut off dry stem end; slice mushrooms very thin.
Immediately pour lemon juice over mushrooms, coating them well.
Slice radishes; tear lettuce into large pieces and place in salad bowl with mushrooms.
Combine salt, pepper, chives, celery and salad oil; pour over salad and mix well.
