|Flour||1 1⁄2 Cup (24 tbs) (Unsifted)|
|Baking soda||1⁄2 Teaspoon|
|Potato flakes||1 3⁄4 Cup (28 tbs), crushed|
|Nuts||1⁄2 Cup (8 tbs), chopped|
|Zucchini||1 Cup (16 tbs), diced (Not Shredded)|
|Milk||1⁄4 Cup (4 tbs)|
Beat margarine, sugar, and egg together until fluffy.
Mix together flour.
Salt, soda, and spices.
Stir potato flakes, nuts, and zucchini into flour mixture; add to sugar mixture alternately with milk.
Mix well after each addition.
Drop from teaspoon on greased cookie sheet.
Bake at 350° for 12 to 14 minutes.
Cool on brown paper.
