Southwest Cilantro Lime Salad

This is a great, healthy salad for summer. The dressing is full of delicious ingredients. Super easy to make and great for lunch or a side at dinner.

Ingredients

For salad:
Romaine head 1 Large , washed and chopped
Canned black beans 15 Ounce , rinsed and drained (1 can)
Orange bell pepper 1 Large , cut into thin strips
Cherry tomatoes 1 Pint , cut in half
Frozen corn 2 Cup (32 tbs) , thawed
Green onions 5 , thinly sliced
For dressing:
Loosely packed cilantro 1 Cup (16 tbs) , stems removed and roughly chopped
Avocado 1/2
Lime juice 2 Tablespoon
Garlic 2 Clove (10 gm)
Olive oil 1/4 Cup (4 tbs)
White wine vinegar 1/2 Teaspoon
Salt 1/8 Teaspoon
Honey 2 Teaspoon

Directions

MAKING:

In a blender, combine cilantro, avocado, lime juice, garlic, olive oil, white wine vinegar, salt, honey and blend until smooth.

In a large bowl, combine romaine head, black beans, bell pepper, tomatoes, corn, green onions and stir well to combine.

Toss with prepared dressing.

SERVING:

Serve and enjoy!
