Betty's Snowy White Cupcakes -- St. Patrick's Day

Betty demonstrates how to make Snowy White Cupcakes for St. Patrick's Day. In the next video, a green frosting will be added to make this a festive addition to any St. Patricks celebration.

Ingredients

White shortening 3/4 Cup (12 tbs) ((Cisco))
Sugar 1 1/2 Cup (24 tbs)
White shortening 3/4 Cup (12 tbs) ((Cisco))
Sugar 1 1/2 Cup (24 tbs)
All purpose flour
Baking powder 1 Tablespoon
Salt 3/4 Teaspoon
Milk 1 Cup (16 tbs)
Vanilla extract 1 1/2 Teaspoon
Egg white 5 ((beaten until stiff peaks have formed))

Directions

Making

In a large bowl, beat shortening and sugar together using medium speed of an electric mixer until fluffy. 

In a medium-sized bowl, combine flour, baking powder, and salt. 

Beat flour mixture into shortening mixture, alternately with milk, beginning and ending with flour mixture. 

Stir in vanilla and beat well. Gently fold in beaten egg whites. 

Spoon batter into paper-lined muffin pans, filling each two-thirds-full. (This batter should make 24 cupcakes.) 

Bake at 350 degrees (F) for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean. 

Remove from oven. Cool in pans on wire racks for 10 minutes. Remove from pans and cool completely on wire racks.
