Betty's Lemon Crinkle Cookies -- Thanksgiving

Betty demonstrates how to make Lemon Crinkle Cookies. These are lemon-flavored cookies that are rolled in confectioners sugar before baking. They rise and crinkle while baking.

Ingredients

All purpose flour
Baking powder 1 1/2 Teaspoon
Salt 1/2 Teaspoon
Sugar 1 Cup (16 tbs)
Lemon zest 3 Teaspoon
Butter 1/2 Cup (8 tbs) , softened
Eggs 2
Lemon juice 1/2 Cup (8 tbs)
Vanilla extract 1/2 Teaspoon
Confectioner’s sugar 1/2 Cup (8 tbs)

Directions

Making

In a medium-sized bowl, stir together flour, baking powder, and salt. Set aside. 

With your fingers, rub the lemon zest into the sugar, until sugar is very fragrant. 

In a large bowl, use an electric mixer to cream the butter and fragrant sugar together until light and fluffy. 

Add the eggs, one at a time, beating after each addition. Add the lemon juice and vanilla, and mix until smooth. 

Add the flour mixture and mix, just until the dough comes together. Chill the dough for 30 minutes. 

After chilling the dough, measure 1/4-cup portions and roll in confectioner’s sugar until well-coated. 

Place 2 inches apart on baking pan that has been lined with parchment paper. 

Bake at 350 degrees about 10 to 12 minutes until cookies are beginning to brown. 

Serving

Cool cookies in pans on cooling rack before transferring to a nice serving plate.
