Ingredients

For herb crusted halibut
Panko bread crumbs 1 Cup (16 tbs)
Kellogg's all bran cereal 1/4 Cup (4 tbs)
Lemon zest 2 Tablespoon
Mild chili 1 Small
Fresh dill 1 Tablespoon
Fresh tarragon 1 Tablespoon
Fresh parsley 1 Tablespoon
Olives 1/4 Cup (4 tbs)
Unsalted butter 1 Tablespoon
Sea salt To Taste
Fresh ground pepper To Taste
Halibut pieces 1 Pound
For chocolate bread pudding
Chopped bread 6 Cup (96 tbs) ((3 baguette, 3 croissant))
Milk chocolate 1 Cup (16 tbs)
Dark chocolate 1 Cup (16 tbs)
White chocolate 1/2 Cup (8 tbs)
Kellogg's all bran cereal 1/2 Cup (8 tbs)
Melted unsalted butter 1/2 Cup (8 tbs)
Vanilla bean/Vanilla extract 1
Sea salt 1 Pinch
Eggs 8
35% cream 1 Liter
Sugar 2 Tablespoon

Directions

FOR HERB CRUSTED HALIBUT

GETTING READY

Preheat oven to 375 degrees F. Line a baking pan with parchment paper and set aside.

 

MAKING

In a large bowl, add in all the ingredients except halibut; mix well.

Place the halibut over the prepared baking pan. Top with herb mixture and bake for 6 – 10 minutes.

 

SERVING

Serve with white bean and tomatoes.

 

FOR CHOCOLATE BREAD PUDDING

GETTING READY

Preheat oven to 350 degrees F.

 

MAKING

In a large bowl, add in the bread, milk chocolate, dark chocolate, white chocolate, Kellogg's all bran cereal and melted butter. Toss well and set aside.

In a large bowl, add in the eggs, scraped vanilla, sea salt, cream and sugar and beat well.

Pour 8 ounces of the mixture into the bread mixture and toss well.

Place the mixture into separate ramekins or a casserole dish. Top with remaining cream mixture.

Place the ramekins into a casserole dish and pour warm water into the casserole. Bake for 45 minutes.

 

SERVING

Serve for dessert.
