Betty's Southern Oatmeal Pie

Betty demonstrates how to make a Southern Oatmeal Pie. This is a great dessert for fall and also for holidays, such as Thanksgiving or Christmas.

Ingredients

Butter 1/4 Cup (4 tbs) , softened
Sugar 1/2 Cup (8 tbs)
Ground cinnamon 1/2 Teaspoon
Ground cloves 1/2 Teaspoon
Salt 1/4 Teaspoon
Dark corn syrup 1 Cup (16 tbs)
Eggs 3
Quick oats 1 Cup (16 tbs)
Cooking oil spray 1 Teaspoon
For garnish
Sweetened whipped cream topping 2 Tablespoon (as needed)
Quick oats 1/2 Tablespoon , toasted (as needed)
Fresh mint sprig 1

Directions

GETTING READY

1. Grease a 9-inch pie plate with cooking oil spray and set aside.

2. Preheat oven to 350 degree F.

 

MAKING

3. In a large mixing bowl, beat butter and sugar until combined.

4. Add cinnamon, cloves, salt, and dark corn syrup. Beat with mixer until smooth.

5. Add eggs, one at a time, and beat after each addition until blended.

6. Stir in quick oats and pour the mixture into the greased pie plate.

7. Pop the pie plate in oven and bake for 30 minutes or until a toothpick or knife when inserted in the center comes out clean.

8. Remove pie plate from oven and let cool.

 

FINALIZING

9. Garnish the top of the pie with sweetened whipped cream topping, toasted quick oats, and fresh mint.

 

SERVING

10. Cut into wedges and serve.
