Pina Colada

Tiki drinks, in particular blended drinks, are coming back in a big way. The Piña Colada is one of the best of the bunch. In this episode, Kathy blends one in her Vitamix blender and makes it a bit luxurious with an aged rum float.
Ingredients
  Fresh pineapple chunks 4
  Coconut cream 1 Ounce
  Silver rum 1 1⁄2 Ounce
  Fresh lime juice 1 Ounce
  Pineapple juice 1 1⁄2 Ounce
  Ice 15 (as needed)
  Dark rum 1⁄2 Ounce
For garnish
  Pineapple wedge 1
  Cherry 1
  Lime wedge 1
Directions

MAKING

1. In a blender, place pineapple chunks, measure and pour, coconut cream, silver rum, fresh lime juice and pineapple juice.

2. Fill a hurricane glass with ice and empty it into the blender, blend until smooth.

3. Pour into the glass, tp with dark rum.

SERVING

4. Garnish with a pineapple wedge, a cherry and a lime wedge.
