Amaretto Dessert Truffles
|Semi sweet chocolate squares||12|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Whipping cream||1⁄2 Cup (8 tbs)|
|Amaretto||1⁄4 Cup (4 tbs)|
|Finely chopped almonds/Finely chopped cocoa||1 Cup (16 tbs)|
Melt chocolate in top of a double boiler.
Remove from heat, and add butter, stirring in 1 tablespoon at a time.
Beat egg yolks until thick and lemon colored.
Gradually stir about one-fourth of hot mixture into yolks, add to remaining hot mixture, stirring constantly.
Stir in whipping cream and amaretto.
Return to heat, and cook 1 minute or until mixture is thickened and smooth, stirring constantly.
Cover and refrigerate overnight or until firm enough to roll into balls.
Roll truffles in chopped almonds or cocoa.
Store in refrigerator.
