Coconut Amaretto Cake
|Granulated sugar||2 Cup (32 tbs)|
|Butter/Margarine||1 Cup (16 tbs), softened|
|Flour||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Angel flake coconut||6 Ounce|
|Amaretto||1⁄2 Cup (8 tbs)|
|Mayonnaise||4 Ounce (4 Heaping Tablespoons)|
Preheat oven to 350°.
Grease and flour cake pans.
Separate eggs; beat egg whites until stiff peaks form.
Cream together sugar, softened butter, and egg yolks.
Add flour, baking soda, buttermilk, coconut, amaretto, and mayonnaise.
Gently fold egg whites into mixture.
Divide batter evenly among pans.
Bake for 25-30 minutes, or until cake tests done.
Cool before removing from pans.
