Rock Cornish Hens With Oranges And Almonds
|Rock cornish hen||1|
|Butter||2 Tablespoon, melted|
|Orange juice||2 Tablespoon|
|Garlic||1⁄2 Clove (2.5 gm), crushed in a garlic press|
|Navel orange||1⁄2 , cut in thin slices (With Peel)|
|Almonds||5 , blanched, slivered, and toasted|
Rinse hen well.
Drain and pat dry.
Place in a shallow baking dish.
Drizzle inside and out with butter.
Combine orange juice, salt, pepper, marjoram, thyme, and garlic in a small bowl.
Pour over and into the bird.
Marinate 2 hours; turn occasionally.
Set bird on a broiler rack and put under broiler about 6 inches from heat.
Broil 12 minutes on each side, or until tender, basting frequently with the marinade.
During the last few minutes of broiling, arrange orange slices around the bird and drizzle with honey.
Garnish with almonds and serve at once.
