Horchata

Ingredients
  Almonds 500 Gram
  Sugar 400 Gram
  Water 2 Liter (2 Bottles)
  Rose essence 1 Teaspoon
  Cardamoms 10
  Milk 1⁄2 Cup (8 tbs)
Directions

Pound cardamoms to a fine powder.
Grind almonds to a paste after blanching them.
Tie cardamoms in a piece of cloth.
Put sugar and water in a pan.
Put in spice bag and boil gently till the sugar dissolves.
Mix in milk.
Remove scum as it rises to the surface.
Put in the almonds.
When the syrup begins to thicken remove from fire.
When cold squeeze out the juice from the spice bag and discard it.
Mix in the essence and strain out through a fine cloth.
Bottle and cork.
When you want to drink it, place a tblsp of the syrup in a glass, fill with cold water.
It is a very delicious drink.
Use strained almonds in any other.
