Glazed Almond Cookies
|Soft butter||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
|Chopped blanched almonds||3⁄4 Cup (12 tbs)|
|Sifted pastry flour||2 2⁄3 Cup (42.67 tbs)|
|Whole blanched almonds||48|
Cream butter and sugar until light.
Beat in extracts and egg yolks.
Add chopped nuts, flour and salt; mix well.
Roll into 1 -inch balls, dip into unbeaten egg whites (this provides the glaze).
Put two inches apart on greased cookie sheets.
Put a whole almond in centre of each ball, and push down to flatten cookie.
Bake in preheated oven at 350°F for about 10 minutes.
