Orange Almond Balls
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Frozen orange juice concentrate||6 Ounce, thawed (1 Can)|
|Confectioners sugar||1 Pound, sifted (1 Box)|
|Vanilla wafers||12 Ounce (1 Box)|
|Blanched almonds||1 Cup (16 tbs), sliced|
|Toasted blanched almonds/1 cup toasted / colored flaked coconut / chocolate jimmies / colored sugar / decorates||1 Cup (16 tbs), chopped|
Heat butter and orange concentrate in a large saucepan over low heat, stirring until butter melts.
Off heat, mix in confectioners' sugar.
Crush vanilla wafers in an electric blender at high speed or with a rolling pin; add to mixture along with sliced almonds and mix well.
Shape into 1" balls and roll in toasted almonds.
Arrange on a tray or baking sheet and chill 2-3 hours before serving.
Store airtight and, if weather is warm, in refrigerator.
