Almond Orange Icebox Cookies
|Sifted flour||2 3⁄4 Cup (44 tbs)|
|Baking soda||1⁄4 Teaspoon|
|Butter/Shortening||1 Cup (16 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Firmly packed light brown sugar||1⁄2 Cup (8 tbs)|
|Orange juice||2 Tablespoon|
|Finely grated orange rind||1 Tablespoon|
|Blanched slivered almonds||1⁄2 Cup (8 tbs)|
Sift flour, salt, and soda together and set aside.
Cream butter until fluffy and beat in sugars.
Mix in orange juice, rind and egg and beat well.
Gradually stir in dry ingredients, then almonds.
Shape into rolls about 1 1/2" in diameter, wrap and chill several hours until firm.
Preheat oven to 375° F.
Using a very sharp knife (because of almonds in dough), slice 1/8" thick and place 1 1/2" apart on greased baking sheets.
Bake 10-12 minutes until lightly ringed with brown.
Transfer to wire racks to cool.
