Trout With Toasted Almonds and Garlic
|Sliced almonds||1⁄2 Cup (8 tbs)|
|Reduced calorie margarine||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Fresh lemon juice||1 Tablespoon|
|Snipped fresh parsley||1 Tablespoon|
|White wine||1 Tablespoon|
|Trout||16 Ounce, heads removed (2 Fishes 6 To 8 Oz. Each)|
In small mixing bowl, combine almonds, margarine and garlic.
Microwave at High for 4 to 5 minutes, or just until almonds begin to brown, stirring once.
Add lemon juice, parsley, cayenne and white wine.
Arrange fish in 10-inch square casserole with backbones toward outside of dish.
Top each fish with half the almond mixture.
Microwave at 70% (Medium High) for 7 to 9 minutes, or until fish flakes easily with fork near backbone, rotating dish after half the time.
