Manager's Majorcan Slice

  Butter/Soft margarine 100 Gram
  Castor sugar 100 Gram
  Eggs 2 Large
  Currants 100 Gram
  Glace cherries 50 Gram, chopped
  Ground almonds 110 Gram
  Self-raising flour 50 Gram

Put the margarine and sugar into a mixing bowl and sit this on a damp cloth.
Using a wooden spoon beat the mixture hard until it is soft, light and fluffy.
Carefully tap the middle of the egg shell on the side of the bowl, letting the egg drop into the mixture.
Beat it in and repeat with the second egg.
Add the currants, chopped cherries and ground almond.
Sieve in the self-raising flour and using a tablespoon stir the mixture thoroughly.
Take a knob of butter on a piece of kitchen paper and rub it round the inside of a 18 cm square cake tin.
Bake in a moderate oven (Gas No. 3 - 325°F - 160°C) for about 1 hour until it is a light golden brown.
Leave in the tin for a few minutes to cool and then turn it out on to a cooling wire.
When cold, cut into 16 squares.
