Orange Almond Rice
|Canned no salt added chicken broth||2 1⁄2 Cup (40 tbs)|
|Unsweetened orange juice||1 1⁄2 Cup (24 tbs)|
|Wild rice||3⁄4 Cup (12 tbs) (Uncooked)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Long grain rice||1 Cup (16 tbs) (Uncooked)|
|Canned mandarin oranges in light syrup||1⁄3 Cup (5.33 tbs), drained|
|Sliced almonds||1⁄4 Cup (4 tbs), toasted|
|Chopped fresh parsley||2 Tablespoon|
Combine chicken broth, unsweetened orange juice, and salt in a medium saucepan; bring mixture to a boil.
Add wild rice and chopped onion to mixture in saucepan; cover, reduce heat, and simmer 20 minutes.
Add long-grain rice; cover and simmer an additional 30 minutes or until rice is tender and liquid is absorbed.
Add oranges, almonds, parsley, and pepper to rice mixture in saucepan; stir well.
