Orange Almond Cookies
|Butter/Margarine||250 Gram (1 Cup Plus 2 Tablespoon)|
|Firmly packed brown sugar||250 Gram (1 Cup Plus 2 Tablespoon)|
|All-purpose flour||325 Gram (Generous 2 Cups)|
|Baking powder||1 Teaspoon|
|Grated orange peel||1⁄4 Tablespoon (Peel Of 1 Large Or 2 Small Oranges)|
|Almonds||3⁄4 Cup (12 tbs), chopped|
Cream butter or margarine and sugar in a large bowl until light and fluffy.
Beat in eggs one at a time.
Sift flour and baking powder with salt; stir a spoonful at a time into creamed mixture.
Add orange peel and almonds; mix thoroughly to make a dough.
Shape dough into a roll 2-1/2 inches (6 cm) wide at each end.
Wrap in foil or plastic wrap.
Preheat oven to 400°F (205°C).
Grease baking sheets.
Cut thin slices from roll of cookie dough; place slices on greased baking sheets.
Bake 8 to 10 minutes or until light brown around the edges.
Cool cookies slightly on sheets then transfer to racks to cool completely.
