Almond Leoat

Ingredients
  Milk 625 Milliliter (2 1/2 Cups)
  Sugar 60 Milliliter (1/4 Cup)
  Almond extract 1 Teaspoon
  Gelatin 30 Milliliter (2 Tablespoon)
  Water 125 Milliliter (1/2 Cup)
  Prepared fresh fruit 1⁄4 Cup (4 tbs)
  Canned lychees 1⁄4 Cup (4 tbs)
Directions

1 Scald milk, remove from heat and add sugar. Cool slightly then add almond extract; cool. Sprinkle gelatine over water and leave until water is absorbed. Dissolve gelatine over hot water and cool. Stir into milk mixture.
2 When ready to serve, cut almond gelatine into diamond shapes. Place fruit in a serving bowl and arrange diamond shapes on top.
