Dore With Almonds

Ingredients
  Whole dore 1 (Thoroughly Cleaned)
  Carrots 2 , grated
  Parsley sprigs 2
  Shallots 4
  Lemon 1 , sliced
  Bay leaves 2 , crushed
  Fennel leaves 6 , crushed
  Dry white wine/Cider 1⁄2 Cup (8 tbs)
  Blanched almonds 2 Ounce, peeled, slivered almonds and toasted
  Butter 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Place in bottom of baker: carrots, parsley, lemon.
Wipe fish clean with damp cloth.
Rub with lemon, salt and pepper on all sides.
Put shallots inside the fish.
Place fish in baker.
Sprinkle bay and fennel on top.
Moisten.
Close and bake.
Just before serving, decorate fish with almonds sauteed in hot butter.
