Almond And Cashew Nut Cookies
|Shortening||1 Cup (16 tbs)|
|White sugar||1 Cup (16 tbs)|
|Egg||1 , beaten|
|Ground almonds||3 Tablespoon|
|Cashew nuts||3 Tablespoon, ground|
|Vanilla extract||1⁄2 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 1⁄2 Teaspoon (Leveled)|
1 Cream shortening and sugar together in a bowl. Add egg, almonds, cashews, vanilla and almond extract.
2 Sift flour, baking powder and salt together. Fold into creamed mixture and knead lightly. Shape dough into walnut-sized balls. Arrange on lightly greased baking sheets. Press each ball with a fork to flatten slightly.
3 Bake at 400°F (200°C) until pale golden, 15-20 minutes.
