Veal Shanks In Brandy

  Olive oil 2 Tablespoon
  Veal shank pieces 4 (Knuckle)
  Salt To Taste
  Pepper To Taste
  Finely chopped shallots 3 1⁄2 Ounce
  Garlic 2 Clove (10 gm), crushed
  Tomato 1 , coarsely chopped
  Carrots 1 Small, grated
  Red bell peppers 2 , rinsed, seeded and diced
  Green bell pepper 1 , rinsed, seeded and diced
  Brandy 3 Tablespoon
  Wine vinegar 3 Tablespoon
  Crumbled thyme 1⁄2 Teaspoon (Fresh)
  Fresh lemon juice 2 Tablespoon
  Chopped fresh parsley 1 Tablespoon

Heat a browning dish in the microwave oven for 6-8 minutes, following the manufacturer's instructions.
When the browning dish is hot, pour in the oil and add the slices of veal.
Leave to sizzle for 30 seconds, then turn.
Season with salt and pepper.
Add all the vegetables to the browning dish and stir.
Add the brandy, vinegar and thyme.
Cover and microwave on HIGH for 7 minutes.
Turn the veal shanks (knuckles), add more salt and pepper to taste, stir well and cover.
Microwave on MEDIUM-HIGH for 20-25 minutes until the meat is tender.
When the meat is cooked, leave to stand for 5 minutes.
Add the lemon juice, sprinkle with the chopped parsley
