Skate Wings In Cider Sauce

Ingredients
  Skate wings 1 3⁄4 Pound
  Salt To Taste
  Pepper To Taste
  Dry cider 3 1⁄2 Cup (56 tbs)
  Sour cream 3 Tablespoon (creme fraiche)
  Mild mustard 2 Tablespoon
  Chopped parsley 1 Tablespoon
Directions

Rinse the skate wings under plenty of cold running water, pat dry on kitchen paper and divide into 4 equal portions.
Sprinkle the base of a rectangular dish with salt and pepper and put the skate wings in it.
Pour the cider over, cover and microwave on HIGH for 8 minutes.
Carefully lift the fish out and remove the skin.
Put the fish portions in a serving dish.
Filter the cooking liquid through a strainer (sieve).
Mix together the sour cream (creme fraiche) and mustard in a bowl.
Add the cooking liquid and stir well.
Microwave on HIGH for 1 minute.
Taste the sauce and adjust seasoning.
Pour the sauce over the fish.
Sprinkle with chopped parsley
