Baked Liver With Cider
|Bacon slice||1 , chopped|
|Liver||1 1⁄2 Pound (In One Piece)|
|Whole wheat flour||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Onion||1 , chopped|
|Celery stalks||2 , diced|
|Carrot||1 , diced|
|Nutritional yeast||3 Tablespoon|
|Cider||1 1⁄2 Cup (24 tbs), hot|
Arrange bacon in bottom of heavy roasting pan.
Dredge liver in flour.
Put on top of bacon.
Cover pan and place in hot oven until meat is richly browned.
Meanwhile, heat oil and in it saute garlic, onion, celery and carrot.
Add all flavorings.
Cover and simmer for 10 minutes.
Arrange vegetable mixture around liver.
Add small quantity of cider.
Cover pan and return to oven.
Bake at 325Â° F. for 1 hour, adding small quantities of cider from time to time until it is all used.
